Generally white will make the colors pop, but a metallic silver will add more sparkle and black will make them significantly darker, you can test on a recycled 2-liter soda bottle to see which backer you prefer.

Black paint as a backer for candy will just be black. If you want to see the candy on the black you will have to put a layer of pearl or something similar in between to get any color to show. I have tried this with Createx and Parma candies. parma is a pigment based candy, and Createx is a dye based candy. Neither had any effect over black unless I sprayed a pearl in between. But that gives a pretty cool effect
You can use lots of colors under candy to achieve different effects. Candy the shell with various colors then do some stripes in various candy colors, then back with various colors. Saw a 1:1 car at a car show like this that was really cool. It was really trippy.
